Opting for a Saturday night in, I decided to plan ahead for a new-to-us meal. The pork does take an entire day to cook in the crockpot, but the assembly after it’s cooked is fast. Another perk is that there is plenty of meat left over for pork sandwiches the next day.
What’s not to love about the summer flavors of pineapple, cilantro, avocado, and lime?! I can already see us making this again to consume while enjoying a summer evening on our deck. Join us! Coronas and margaritas are sure to be on the menu, too!
